The real strength of using a medium shield to parry as opposed to a small shield/caestus is that you still have a pretty reliable shield if your opponent isn't parry-able. Personally I'd go Silver Knight or Lothric Knight for the super high stability. Unless you're stacking Chloranthy+Grass Crest+Green Blossoms the stamina regen is so fucking weak.
